Crispy Chipped Chicken

Preheat the oven to 350 degrees fahrenheit and line a baking tray with tin greaseproof paper.
Pour the flour in a shallow dish or plate and season with salt and pepper. Crack the eggs into a bowl, season with salt and pepper and whisk. Slice each chicken breast into 4 or 5 strips. Dip the chicken in the flour, covering completely. Dip the floured chicken into the egg mixture. Crush the chips or crisps and cover the chicken with the chips, sticking as many to the covering as possible. Place the chicken on a baking sheet. Heat the oil in a pan. Warm until a droplets of water sizzle. Cook the chicken until golden brown. This should take around three minutes per side. Transfer the chicken to the pre-prepared baking sheet. Place in the oven and cook for between 15 and 20 minutes, until the chicken is cooked through. |
