The History of Potato Chips & Crisps Packaging
Potato Chips / Crisps / Shavings recipes are recorded in early 19th century recipe books.
One such book, by Dr William Kitchiner called The Cook's Oracle, includes this recipe:
“Peel large potatoes... cut them in shavings round and round, as you would peel a lemon; dry them well in a clean cloth, and fry them in lard or dripping.”
This is the first recorded historical reference to the invention of Potato Chips / Crisps.
However, the most accepted and romantically recorded ‘commercial’ timeline had its origins in New York State in 1853.
Although there are many myths and legends related to the romantic story of George Crum and the invention of Potato Chips in America, the invention is credited to Crum by the US Snack Food Association, who claim Crum brought his invention to his newly opened restaurant in the early 1860s, where he placed them in baskets on all the tables.
It also claims that they were marketed in takeout boxes as Saratoga Chips.
Crum never patented or protected his invention.
When Crum died in 1914, his obituary stated he was the originator of the Saratoga Chip. However, when his sister Catherine died in 1917, her obituary also stated she was the inventor of the Saratoga Potato Chip. In this obituary is said that Catherine first arrived in Saratoga in 1861, a full eight years after Potato Chips / Crisps were allegedly invented.
