350g / 12oz minced (ground) beef 1 egg 30ml / 2 tbsp roughly chopped parsley 2.5ml / ½ tsp crushed dried red chillies 1 thick slice white bread, no crusts 30ml / 2 tbsp milk 30ml / 2 tbsp olive oil 1 pack potato chips or crisps (a spicy flavour)

In a small bowl break the bread into small pieces and mix with the milk. Crush your bag of spicy flavoured potato chips or crisps. In a second, larger bowl, put the beef, egg, the parsley, the crushed chillies and your spicy chips or crisps. Once the bread has soaked up the milk, squeeze the milk out and add to the second bowl. Mix first, with a wooden spoon and then kneed with your hands until the mixture becomes smooth and sticky. After washing the sticky mess from your hands, tear small lumps from the mixture and make around 50 small balls. Place the meat balls on a tray and leave for 30 minutes. To cook the meat balls, use a frying pan to brown on all sides in the olive oil. At this stage you can add your sauce, whether home-made or shop bought.
